✅ Ingredients (Serves 2):
- 1 cup fresh blueberries (or thawed frozen ones)
- 1 small ripe banana, mashed (natural sweetener and creamy base)
- 1 tablespoon chia seeds (for thickness and fiber)
- 1 teaspoon lemon juice (enhances flavor and preserves freshness)
- 1 teaspoon lemon zest (optional, for extra aroma)
- 1 tablespoon unsweetened shredded coconut
- ½ teaspoon pure vanilla extract
- A pinch of cinnamon
- Fresh mint leaves, for garnish
- Optional topping: chopped almonds, coconut yogurt, or extra berries
🍴 Instructions:
- In a bowl, mash the banana until smooth.
- Add the chia seeds, lemon juice, lemon zest, vanilla extract, and cinnamon. Mix well.
- Stir in ¾ cup of the blueberries, lightly mashing some of them to release their juices while leaving others whole for texture.
- Let the mixture sit for 15–20 minutes at room temperature (or refrigerate) until it thickens slightly due to the chia seeds.
- Once thickened, gently fold in the shredded coconut.
- To plate: use a round mold or ring to shape the tartare on a small dessert plate or glass. Top with the remaining blueberries and your optional toppings.
- Garnish with fresh mint leaves.
