Blueberries with Greek Yogurt

Ingredients (for 2 servings):

  • 1 cup fresh blueberries (frozen can be used if needed)
  • 1 cup plain Greek yogurt (whole milk or low-fat, as preferred)
  • 1–2 teaspoons honey or agave syrup (optional, to taste)
  • 1/2 teaspoon vanilla extract (optional)
  • 2 tablespoons granola or chopped nuts (optional, for crunch)
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. Prepare the yogurt:
    In a bowl, mix the Greek yogurt with honey and vanilla extract (if using). Stir well until smooth and creamy.
  2. Assemble the dish:
    In individual cups or bowls, add a layer of yogurt at the bottom. Add a layer of blueberries on top. Repeat for more layers if desired.
  3. Add toppings:
    Sprinkle granola or chopped nuts over the top for extra texture and crunch.
  4. Garnish and serve:
    Garnish with fresh mint leaves if desired. Serve immediately, or refrigerate for up to 1 hour before serving.

  • Feel free to add other fruits like strawberries, banana, or mango.
  • For a dessert-like texture, chill the yogurt in the freezer for 30 minutes before assembling.
  • For a vegan version, use plant-based yogurt (such as coconut or almond) and a plant-based sweetener.
