Mediterranean Herb-Crusted Chicken Breast

(Total Time: 30 minutes | Servings: 2)

Ingredients:

  • 2 boneless, skinless chicken breasts (about 150g each)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ lemon (juiced)
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • ½ cup kalamata olives
  • ¼ cup crumbled feta cheese (optional)

Instructions:
1️⃣ Prep (5 min):

  • Preheat oven to 200°C (400°F)
  • Mix herbs, spices, olive oil and lemon juice in a bowl

2️⃣ Cook (25 min):

  • Coat chicken with herb mixture
  • Place in baking dish with tomatoes and olives
  • Bake for 20-25 minutes until internal temp reaches 75°C (165°F)
  • Sprinkle with feta if using
