Ingredients:
- 2 boneless, skinless chicken breasts (about 150g each)
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp garlic powder
- ½ tsp paprika
- ½ lemon (juiced)
- Salt and pepper to taste
- 1 cup cherry tomatoes
- ½ cup kalamata olives
- ¼ cup crumbled feta cheese (optional)
Instructions:
1️⃣ Prep (5 min):
- Preheat oven to 200°C (400°F)
- Mix herbs, spices, olive oil and lemon juice in a bowl
2️⃣ Cook (25 min):
- Coat chicken with herb mixture
- Place in baking dish with tomatoes and olives
- Bake for 20-25 minutes until internal temp reaches 75°C (165°F)
- Sprinkle with feta if using
