Sweet Blueberry Tartare Dessert

A naturally sweet and refreshing dessert made with whole ingredients — vegan, gluten-free, and refined sugar-free.

✅ Ingredients (Serves 2):

  • 1 cup fresh blueberries (or thawed frozen ones)
  • 1 small ripe banana, mashed (natural sweetener and creamy base)
  • 1 tablespoon chia seeds (for thickness and fiber)
  • 1 teaspoon lemon juice (enhances flavor and preserves freshness)
  • 1 teaspoon lemon zest (optional, for extra aroma)
  • 1 tablespoon unsweetened shredded coconut
  • ½ teaspoon pure vanilla extract
  • A pinch of cinnamon
  • Fresh mint leaves, for garnish
  • Optional topping: chopped almonds, coconut yogurt, or extra berries

🍴 Instructions:

  1. In a bowl, mash the banana until smooth.
  2. Add the chia seeds, lemon juice, lemon zest, vanilla extract, and cinnamon. Mix well.
  3. Stir in ¾ cup of the blueberries, lightly mashing some of them to release their juices while leaving others whole for texture.
  4. Let the mixture sit for 15–20 minutes at room temperature (or refrigerate) until it thickens slightly due to the chia seeds.
  5. Once thickened, gently fold in the shredded coconut.
  6. To plate: use a round mold or ring to shape the tartare on a small dessert plate or glass. Top with the remaining blueberries and your optional toppings.
  7. Garnish with fresh mint leaves.

🌿 Serving Ideas:

  • Serve chilled for a refreshing dessert.
  • Pair with a dollop of unsweetened coconut yogurt or almond cream for extra creaminess.
  • Add crushed nuts or seeds on top for crunch.
