Ingredients

For the meatballs:

For the quinoa:

  • 1 cup dry quinoa

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare meatballs: In a bowl, combine all meatball ingredients. Mix gently until just combined. Form 12 equal-sized balls.
  3. Bake for 22–25 minutes, or until internal temperature reaches 160°F (71°C).
  4. Cook quinoa: Rinse quinoa, combine with water and salt in a saucepan. Bring to a boil, cover, and simmer for 15 minutes. Let stand 5 minutes, then fluff with a fork.
  5. Serve meatballs over quinoa with a drizzle of olive oil or squeeze of lemon.
